This recipe takes full advantage of the grill's ability to impart a smoky flavor, complementing the freshness of the bronzino with the aromatic presence of thyme, bay leaves, and lemon.

Ingredients:

  • 2 whole bronzino fish, filleted and scaled
  • 2 cloves of garlic
  • 2 lemons
  • 2 large sprigs of thyme
  • 2 fresh bay leaves
  • Good olive oil (such as Bonacci)
  • Sea salt and freshly ground pepper

Instructions:

  1. Prep the Grill: Preheat your Arteflame grill to a medium-high temperature.

  2. Prepare Lemons: Cut one lemon into four slices. Place the slices directly on the grill grate, allowing them to char slightly for added flavor.

  3. Stuff the Bronzino: Stuff each bronzino cavity with a sprig of thyme, one bay leaf, and two slices of the grilled lemon.

  4. Season: Rub the outside of each bronzino with olive oil, then season generously with sea salt and freshly ground pepper to enhance the flavors.

  5. Grill: Place the bronzino on the grill. Cook each side for approximately 5-7 minutes, or until the skin becomes crispy and the fish is cooked through, indicating it's ready to be served.

  6. Serve: Garnish the bronzino with fresh lemon wedges, a sprinkle of sea salt, and a dash of freshly ground pepper. The combination of grilled lemon and fresh herbs will bring out the best in the fish.
